It doesn't make sense why Mercedes would bring out a less powerful and less torque producing engine in the S500, it would have made sense to use the 4.0 version from the regular AMG C63 with 350kw/476PS and 650NM of torque. Maybe they intend to bring out an additional S550 model between this S500 and the S600?

It seems this particular less powerful S500 model is available in China.

They also have a less powerful 200kw/272PS version of the 3.0T V6 in a S320 model.

Actually this is off topic but look at the E-class (W212) models they have in China. A base E180 with a detuned version of the E200 2.0ltr 4-cylinder and not the 1.6 engine as in the C180.
