Out of this list I'd only consider the R8 and 991 Turbo but it's really up to you which you like most.
 
everyday use or more weekend toy?

I'd get the GT3 but I am kinda in love with that car.

1) GT3
2) Aston
3) SLS
4) R8
5) M6
6) 911 turbo
7) SL63
8) XKR-GT
 
I don't know if you are aware but there is a "don't drive" directive on 2014 GT3 cause of engine fires. And Porsche is going to replace the engine on all the existing 2014 GT3s. So even if you buy one now, you can't really drive it till Porsche fixes this. Not sure what Porsche's timeframe is to do this but I would assume at least couple of months. If you are ready to wait, I don't think there is a substitute for the new GT3 from that list, R8 is probably the closest and the alternative I would choose. But then again if I had 155k to spend on a sports car, I would get a 997.2 RS.
 
I'd pick a GT3 if it were actually working.

I don't know, I read both versions - people who are very wary of buying a car, a high performance one at that too with the engine installed by a dealer instead of being installed at the factory and others who say it is no big deal. Who knows what the truth is. Either way it is not ideal.
 
Is there not a lot of cases when the engine need to be remove when working on a 911, if correct then what is really the difference?

Personally, I find taking out an engine and then putting it back, quite harmless. It's more psychological, than about reliability.

Now, disassembling the engine, for example to replace piston rings or valve drivers, this is a completely different thing!
 
I imagine the mechanics and technicians at a Porsche dealer are going to be a couple steps up above the guy 'round the corner. But when it comes to a highly strung machine such as this, that thought will always be in the back of my mind whether I'm on the highway or if I am tracking. If I am spending north of a US$155K, I don't know if I'd want that thought looming in my mind. And again, that's coming from someone who categorically adores the GT3.
 
^Whilst I do get your point they aren't working on the existing engine its only swap over, unless they fail to tighten all the bolts up correctly nothing should be different than if it were done at the factory.
