If I am not mistaken, spare parts are produced alongside the said model, not after its production ends. All spare parts are then stored and simply used until they are over. EU legislation requires at least 15 years of spare parts coverage for every product (not only automotive), again if I am not mistaken.
Most car manufacturers have spare parts stock for much more than 15 years, though. For example, I still find spare parts for my 25 Clio at the Renault dealership, without any other issue, apart from waiting a few weeks for them to arrive from France.
Interior trimmings are more troublesome. A lot of the interior trimmings for the W126 are no longer available.
Scrapyards can be a good source of spare parts. There are countless of cars that are written off but have lots of functioning parts. Then there are also websites that sell cars for cheap that can be used as donor.
If I remember correctly Mercedes recently reopened the manufacturing of spare parts for the SL W113 and the SEC W126.
