Dominic, the icon text's are on a black box because they are written in white font and your wallpaper is white under them so the texts wouldn't show otherwise. I think you can change the color of the icon texts from the Desktop options menu.

or you could use something like Object dock with those items appearing from the side when your mouse goes by. That way you can delete these on your desktop and you have a nice empty picture.
