Does Bugatti actually make any profit, because VW hides all their financials?

Winkelmann states that Bugatti is profitable in the Super Sport promotional video clip posted earlier in this thread.
It would be highly damaging at a number of levels for this not to be the case so I doubt that it's not true.
Besides, Piech's VAG took the loss hit for all the the R&D that went into Veyron, so Chiron had a good leg up from that endeavour for being profitable.

Yea, I can't imagine VAG wanting to sell a golden goose, and of all the possible buyers, to Rimac.
If there is any truth to the rumors, I bet it is one of "Piechy" moves => Sell Bugatti to Rimac, burying Rimac nose deep in debt and forcing to sell itself and Bugatti back to VAG!

I'd suppose that Bugatti is only profitable thanks to considerable investment from VW. Based on the production numbers Bridster posted a couple of pages back, perhaps Bugatti's current business model just isn't sustainable if they need 500 customers and numerous special editions to turn a profit. With the Chiron's successor likely being a clean sheet design from a technical point of view, it wouldn't surprise me if they felt the return on further investment would be too low, or require an unrealistic number of units, or simply take too long to manifest, to continue supporting the brand alone... everything I've read about this before indicates it's not simply a sale of the Bugatti brand to Rimac, but the forming of a joint venture with Rimac to help take Bugatti (and Porsche) into the future.

What happens when they have to develop a Chiron replacement from scratch though, like an EV one? Veyrons made a loss, and Chirons probably made some profit based on the Veyron having done all the leg-work, but what next?

The F40 pissed off a lot of owners, Ferrari announced they would build 400 and ended up building 1315. Imagine how much those 400 would be worth today if they hadn't build the extra 915 cars.

Pretty much. Rimac supplies the tech and platform, Bugatti provides the design and heritage. Depends on one's perspective, that's a win-win. Purists of sorts may disagree though.
