That's where Hill Start Assist comes in, formerly call hill holder in US cars around 1950. When stopped on an upgrade holding the foot brake, taking your foot off the brake pedal, the brakes are held for 1-2 seconds, giving you a chance to get moving without rolling back.
Or is this US equipment only? Doubt it.
From what I know the Hold function in a Mercedes does not only hold the car 1 or 2 seconds, but untill you hit the throttle again, so you don't even use the foot/handbrake in these case, just brake, when the car is stopped you brake a bit harder and put your foot off the pedal, the cars holds on untill you throttle again. Or is it only for E and S-Class?
