Haha thats funny about some engineers putting more power in the engines.
Yes, at the Porsche Factory Tour in Zuffenhausen, one man builds one engine, but I'm not sure if the Tech's name is so readily accessible to the customer.
They do sign off on them so Porsche can keep track of their Techs for quality control reasons. There is a tolerance range to what the hp and torque figures put out, + or - some but I don't know how much. After that they hot test the engines like crazy to ensure additional quality: Meaning they run the engines for a while at max RPM to make sure the engine works well at high stress conditions for long periods of time.
The first couple generations of 55 AMG engines were just NA, its the later years that they added the Kompressor to the G55. That much power might be rediculous though, I don't see much of a point in that much power in a 3-ton box, as cool as it is. Rather have that in the Porsche.
