Just seem a bit weird to tease the hell out of the saloon as if it’s the second coming of Christ, only offer an SUV variant. It’s like showing teenagers a French 7 course menu but then presenting them with a burger and fries menu.

I guess it’s not weird. Like someone said, it’s better to cannibalism yourself than letting other car brands do it. And it’s also good to offer an suv in case the demand for the saloon is lower than expected.

Won't they all (AMG.EA SUV, Cayenne EV and ix5) share similar dimensional footprints, all in the immediate vicinity of the 5000mm in length measurement ? And could there also be an "M 70" of the ix5 as well ?

The X5 is a competitor to the GLE. It's not fundamentally a sports car. The GT SUV is in a different class. Comparing the two wouldn't be accurate. Think of it as an electric version of the Urus.
